Every cake we offer is hand made by chef and every chef has different way of making the cake and garnishing. Hence the cake delivered might have the variation in design and shape.

Delivery time is dependent on factors such as availability of the product, traffic and many others. Hence the time selected is the estimated time of delivery.

Cakes being the edible and perishable item, we will be attempting the delivery once. If the receiver is not at the delivery location and the cake is returned we might have to discard the cake depending on the quality after the attempt of delivery.
Delivery in no case can be redirected to any other address.
Occasionally, nearest replacements of the product selected might be necessary to be delivered as all the products might not be available sometime.

 

Chocolate Truffle cake Recipe by Midnightcake.com

First gather the following material in the proper proportions for approximately half kg cake. 
(All the proportions are approximate and can be altered as per requirement)
 

  • 180 grams all purpose flour

  • 35 grams cocoa powder

  • 90 grams butter

  • 170 grams sugar

  • 100 grams milk powder

  • 1 bowl of curd

  • milk as required

  • 1 Tablespoon vanilla extract

  • ½ Tablespoon baking powder

  • ½ Tablespoon soda bicarb

Preparing the Base:-

Fireup the Oven and preheat it.
Mix the flour, baking powder, baking soda and cocoa powder. Start making the batter of the mix.

Take a medium sized bowl. Take sugar and butter in the ratio of 3:1. Now keep mixing well to form a smooth good consistency paste. Dont add all the butter and sugar at once. Add it gradually as it gets the required consistency. 
Once this paste is ready start adding the milk powder and curd gradually. Dont forget to keep stirring the mix. Keep doing it unless you get smooth frothy batter. Now start adding the amida and cocoa powder. Keep mixing it. Beat the batter and if needed add milk to improve the consistency and decrease resistance. 
The whole process must take about 15 to 20 mins.

Now grease the pan with butter and sprinkle some flour to avoid the overburning of bread of cake. Pour the batter in the pan slowly and make sure there are no knots. Now keep the oven at 160 degrees celsius and keep the pan in the oven for 40 to 45 mins. To check the perfect baking insert the knife in the cake and if it comes out clean the cake is ready.

Take it out and let it cool for 15 to 20 mins.

Now take the pan and empty it on the flat plate.

The base of the cake is ready.

Preparing the Ganache (filler):-

Take a microwave bowl, cut the chocolate into pieces and add the cream according to taste to it. We prefer the mixture of dark and chocolate compound along with small amount of heavy cream. Heat it in the microwave until it is melted with occasionally taking it out and mixing it to avoid the knots in it. Do it until its completely smooth. Now let it cool. Now your filler is ready.

Making the cake:-

Cut the cake which is out on the flat plate into 3 to 5 equal slices. 
Now keep the first slice over the plate or revolving cake stand. Pour the cold ganache and spread it evenly over the first slice and repeat with all the slices keeping the thickness of the ganache thickness as per taste.

Once its ready, heat the ganache and make dilute it so that you can pour over the cake and cover the cake with shiny truffle and its ready.
